Redfish Saloon stands where Sebastian’s first fish house once worked the waters of the
Indian River Lagoon in the early 1900s. In those days, redfish, seatrout, snook, oysters,
clams and shrimp were hauled in daily from a fishery that helped define this old Florida
fishing village. Today, we honor that legacy with an overwater table, blending the
lagoon’s bounty with the flavors of New Orleans, Charleston, Savannah, and Southern
craft BBQ—where every dish tells a story of tide, smoke, and time.
